چکیده
Ensuring food safety is becoming progressively important in frozen foods due to increased demand and consumption worldwide. Monoterpenes Released from Fruit, Plant, and Vegetable Systems
To quantify the emission rate of monoterpenes (MTs) from diverse natural sources, the sorbent tube (ST)-thermal desorption (TD) method was employed to conduct the collection and subsequent detection of MTs by gas chromatography. The calibration of MTs, when made by both mass spectrometric (MS) and flame ionization detector (FID), consistently exhibited high coefficient of determination values (...
متن کاملMicrobiological safety of street vended fruit chats in Patiala city.
Street-vended foods are appreciated for their unique flavours and convenience, as well as for maintaining the nutritional status of the population. They also assure food security for low–income urban population and livelihood for a significant proportion of the population in many developing countries. In spite of these potential benefits, street foods have been reported to be contaminated with ...
متن کاملStability of vitamin C in frozen raw fruit and vegetable homogenates
Retention of vitamin C in homogenized raw fruits and vegetables stored under routine conditions prior to analysis was investigated. Raw collard greens (Brassica oleracea var. viridis), clementines (Citrus clementina hort. ex Tanaka), and potatoes (Solanum tuberosum) were chosen, being representative of foods to be sampled in USDA’s National Food and Nutrient Analysis Program (NFNAP), and having...
متن کاملFruit and Vegetable Flavor
Introduction: The quality of fresh produce has traditionally been based on external characteristics of size, color, and absence of surface defects. Fruit and vegetable breeders selected for color, size, disease resistance, yield and other easily quantified horticultural traits. Because flavor and texture characteristics were not a part of the selection process, improvements in these quality att...
